NOW THE RECIPE

You will need:

  • 3 lbs Shrimp for a large family
  • 1/2 Onion
  • 1/4 clove of Garlic
  • 8 tablespoons of Butter
  • Cilantro
  • Cooked white rice
  • Two Tomatoes
  • Chile de Arbol (about a hand full)
  • Chile Ancho (about 6)
  • Lemon
  • Salt and pepper for taste

THE PROCESS

Step 1. Peel the shrimp.  Squeeze half a lemon over them.  Move them to the side.

Step 2. In a pot, boil the Chile de Arbol, the seedless Chile Ancho, and tomato.

Step 3. Melt 4 tablespoons of butter in a separate pan.

Step 4. Sauté semi thinly sliced onion and garlic in the same pan.

Step 5. After the onion is slightly cooked begin to add shrimp in small portions.

Step 6.  Add salt and pepper for taste.

Step 7. When the chiles have become soft place them in the blender.  Add tomato.  Purée to a soft consistency.

Step 8. In a separate pan add the rest of the butter and allow it to melt before adding the chile purée.  Let the purée heat to a quick bubble.

Step 9. Begin to add purée to fully cooked sautéed shrimp and onion.

Step 10. Add about 1 cup of water and let cook for about five minutes.

Step 11. Lastly add cilantro as garnish.

Serve over rice. You’re done!
